A seriously gooey chocolate fondant with a spicy heat.
Prep time 15 minutes. Cook time 12 minutes. Makes 8.
185g 60% Dark Chocolate
100g Caster Sugar
4 Egg Yolks
4 Whole Eggs
20g Plain Flour
Melt together the chocolate, butter and sugar.
Combine the egg yolks and whole eggs and whisk to combine with the first mixture.
Take a small amount of the mixture and make a paste with the flour and spice rub, then combine all together.
Pipe into a greased and cocoa powdered mould and chill before cooking at 170c for 12 minutes (size dependant).
Leave to rest for 1 minute for turning out onto plate.
