Van Houten are legendary in chocolate circles. Founded by Casparus van Houten in 1815, the Van Houten company invented two processes central to modern chocolate production – the cocoa press and the 'dutching' method of using alkaline salts to remove the bitter taste of cocoa. Now owned by Barry Callebaut, Van Houten specialise in cocoa powder and chocolate drinks.
