Ideal for chocolatiers and bakers, this coloured spray creates a velvet-like finish on chocolates and fondants. To achieve the desired consistency, warm the spray in a water bath (no warmer than 40¡C) and spray onto a well-chilled surface from a distance of 25cm, under a fume hood or cover. After application, immediately move your creation into the fridge to maintain the effect.
