SOC Chef's Kappa Gum is a vegetable-based gelling agent which works almost instantly. This achieves fine lacquers and thin glazes. Available in a 130g tub, this Kappa Gum is suitable for cold dissolution, then bring to the boil to activate gellification. Increase the dosage to achieve a firmer gel.
