Sosa vegan mousse

A taste-free and odourless, vegan gelling ingredient that creates light, airy and stable mousses without eggs or dairy. Derived from Agar Agar and tapioca starch, and provided in a powder format, this ready-to-use ingredient is ideal for creating professional-quality mousses that're suitable for vegan diets.

Properties:

Of vegetable origin, the composition is designed to replace animal-based gelatin. It provides a clean cut in the mouth, is temperature resistant and freeze-stable.

Dose:

Between 1.5 to 2.5%

Use:

Add to base cream and heat to 90 - 100°C while mixing, then envelope the mix as it cools to 50 - 60°C.
