Just like a fine wine, great chocolate starts with careful fermentation. At Belcolade, the journey to bold, complex flavour kicks off right at origin. Belcolade set up post-harvest centres in cocoa-growing communities, where the beans are gently fermented in wooden boxes - think of them as the chocolate world’s answer to wine vats!
Local experts, trained and supported by Belcolade's team, manage the process with precision and care. Each batch gets 6 to 7 days of tailored fermentation, tuned perfectly to the unique character of the local beans. The result? Chocolate that sings with flavour - deep, rich, and beautifully balanced, from bean to bar.

This chocolate is far to easy to eat! Smooth rich chocolaty flavour, and very easy to work with. Highly recommended.
This chocolate has a mild cocoa taste but it’s not too sweet, the texture is smooth, I like tempering it to turn it into chocolate bars and eggs. I like even more mixing with a little bit of dark chocolate 55% for an extra cocoa touch.
This cocoa mass is on a whole another level compared to others, absolutely delicious, very rich Belgian chocolate taste. No traces or nuts or peanuts. Awesome ♥
