SOC Chef's Pectin NH is ideal as thickener or gelling agent in products with a high sugar content. When combining with sugar, add at 40°C. To create a gelling agent, combine with Soc Chef's Citric Acid when boiling. Available in a 180g tub, this ingredient is ideal for creating jams, preserves, fruit jellies and glazes.
