Vibrant and truly flavoursome. These raspberry white chocolate blondies will be sure to give you your sweet and fruity fix.

Serves: 1 half gastro tray 9 portions (dependent on size cut)
250g Caster Sugar
3 whole eggs
110g Plain Flour
Pinch of salt
180g Belcolade melted white chocolate
50g Irca raspberry joypaste
50g Belcolade white chocolate chunks
50g fresh raspberries
Tip of knife worth of Sosa red colouring powder
In a kitchen aid beat together the butter and sugar.
Once white and fluffy, slowly add the eggs one by one.
In stages add the flour and salt alternating with the melted white chocolate and raspberry paste.
Add the red food colouring to help ensure it retains its colour in the cooking process.
Remove from the machine and by hand incorporate the fresh raspberries and white chocolate chunks.
Place mixture into a lined half gastro tray and bake at 170c for 20 minutes.
