ingredients
- butter : 180g
- caster sugar : 250g
- whole eggs : 3
- plain flour : 110g
- Pinch of salt :
- Belcolade melted white chocolate : 180g
- Irca raspberry joypaste : 50g
- Belcolade white chocolate chunks : 50g
- fresh raspberries : 50g
- Tip of knife worth of Sosa red colouring powder :
method
- In a kitchen aid beat together the butter and sugar.
- Once white and fluffy, slowly add the eggs one by one.
- In stages add the flour and salt alternating with the melted white chocolate and raspberry paste.
- Add the red food colouring to help ensure it retains its colour in the cooking process.
- Remove from the machine and by hand incorporate the fresh raspberries and white chocolate chunks.
- Place mixture into a lined half gastro tray and bake at 170c for 20 minutes.
