This 100% plant-based thickener, stabiliser, and emulsifier, made from brown and golden flax seeds, can be used to improve the mouthfeel and freezing processes of a variety of desserts, such as sauces, coulis, ice cream, sorbets, mousses, and meringues, and comes in a convenient screw-top tub for easy storage and freshness.

Application:
Sauces and coulis:
Thickening for hot or cold, sweet or savoury sauces with a high pH range.
Ice creams and sorbets:
It acts as a stabiliser and emulsifier. Increases creaminess and helps incorporate air. Improves freezing by helping to form smaller ice crystals.

Mousses and meringues:
Helps stabilize meringuesand mousses by improving aeration and retaining foams’ air content. Prevents water loss during defrosting.
