SOC Chef's Gellan Gum is naturally derived from glucose and available in a 150g tub. Use as a gelling agent by dissolving in the product you'd like to gellify, then bringing the solution to the boil. This Gellan Gum can also be used for spherification. It does not withstand being frozen.
