This brandy banana bread is a fun “adult” version of banana bread – spiked with brandy and moist with the addition of sour cream.
Ingredients225g banana flesh 30g sour cream 100g whole eggs 6g vanilla extract 200g t55 flour 170g caster sugar 5g baking soda 3.7g baking powder 3.5g salt 145g butter 4 lemon zest |
MethodBlend the banana, brandy and sour cream. Add the eggs, lemon zest and vanilla. Mix all of the dry ingredients, add the butter and half of the banana mix. Blitz for one minute then add the remaining banana mix in two steps. Pour into a greased/lined loaf tin then bake at 170˚C for 30-40 minutes. |
