This luxurious amaretto hot chocolate is the perfect addition to your drinks and dessert menu. Incorporating mini marshmallows and a sprinkling of cocoa caviar, this winter warmer is the most decadent beverage you’ve ever seen!

Hot chocolate

Ingredients

40g deZaan hot chocolate 

200ml whole milk 

1 shot Grandes Distilleries Pereux, amaretto 

Method

In a sauce pan add hot chocolate powder and whole milk.

Whisk to combine and bring up to 60°c. 

Add the amaretto and pour in glass.

Chantilly cream

Ingredients

50g double cream 

10g caster sugar 

1g Norohy vanilla extract 

Method

Whisk all ingredients together until whipped.

Pipe onto hot chocolate.

Cocoa caviar

Ingredients

250g water 

50g crimson red cocoa powder

50g sugar 

12g Sosa vegetal setting powder  

Method

Whisk all ingredients and bring up to the boil. 

Use a syringe to drop the mixture into cold oil. 

Strain from the oil and wash under cold water. 

Serve.
