Hot chocolate
Ingredients200ml whole milk |
MethodIn a sauce pan add hot chocolate powder and whole milk. Whisk to combine and bring up to 60°c. Add the amaretto and pour in glass. |
Chantilly cream
Ingredients50g double cream 10g caster sugar |
MethodWhisk all ingredients together until whipped. Pipe onto hot chocolate. |
Cocoa caviar
Ingredients250g water 50g sugar |
MethodWhisk all ingredients and bring up to the boil. Use a syringe to drop the mixture into cold oil. Strain from the oil and wash under cold water. Serve. |
