Celebrate this Mother's day with a classic flavour duo, strawberries and cream, topped with extra sparkle to make mum feel extra-special. This ready-to-go icing provides a burst of flavour and a soft pink base for your finishing touch. Then use a splash of Rainbow Dust's gold paint, a sprinkle of gold stars and a scattering of rose sugar crystals to make this piece really shine.  

Ingredients

400g strawberries & cream icing

Pre-made macarons

Rainbow Dust sparkle spray, golden belle

Chocolatree edible gold squares

Pecan Deluxe fat-coated sugar pearls, red

Method

Using a piece of card, draw an M shape (making sure it is no bigger than the cake you have) and cut this out to use as a template.

Cut the top off your traybake using a cutting guide, if you have one, to make sure it is even.

Place the M shaped card on top of your baked cake and use a sharp knife to gently cut around the template.

Snip the end off the piping bag and insert the nozzle (we have used a Wilton plain tube nozzle, number 12).

Stir the strawberries & cream icing with a spoon and put into the piping bag. Pipe small bulb shapes on top of the M.

Lay down some greaseproof paper, select the macarons you want to use and lay them on the paper.

Spray the Rainbow Dust sparkle spray over the macarons, and then arrange them on top of the cake.

Finish with sugar pearls and small pieces of the edible gold squares.
