Looking for a show stopping after dinner snack or even a last minute handmade gift? Try these mendiant Christmas trees, made from fruit and nut studded chocolate discs, layered with a creamy hazelnut praline ganache and topped with a chocolate star, they're the prefect treat!
Mendiants
Ingredients200g Belcolade dark chocolate |
MethodLine six different sized rings with acetate and then temper the chocolate and pipe into size discs. Immediately decorate with the nuts and fruit then leave aside to set. |
Hazelnut praline ganache
Ingredients150g Belcolade dark chocolate |
MethodMelt chocolate the chocolate and add the cream and praline paste then mix until smooth. |
Assembly
Pipe a small amount of ganache onto a plate, then place the largest disc on top, continue adding ganache and discs until you run out, add a final small amount of ganache and place the star on top. Finally dust with icing sugar.
