Nutty baileys fudge

Our nutty Baileys fudge is guaranteed to get you in the Christmas spirit!  A simple, easy to make recipe. Why not share with friends and family as a great homemade Christmas gift.

500g Caster sugar
250g Double cream
30g Sosa Liquid glucose
30g Butter
300g Belcolade milk chocolate
150g Baileys
100g Roasted hazelnuts (chopped)


In a pan boil the sugar, cream, glucose and butter to 118c.

In a kitchen aid bowl add the chocolate and the hazelnuts.

Once the first mixture has reached 118c pour it into the kitchen aid bowl and turn on slowly.

Pour in the baileys on a slow speed until all incorporated. 

Then beat for a further 10 minutes until the mixture is thicker and starting to set. 

Pour the mixture out and into a half gastro tray lined with cling film.

Place into the fridge to set for approx. 2 hours.

Cut into desired size pieces.
