SOC Chef's Arabic Gum is a natural and high-quality ingredient. Ideal for enhancing texture, Arabic Gum is used to improve the stability and flexibility of pastry products, while also serving as a finishing glaze. Insoluble in alcohol and fats, this Arabic gum is best used with water.

- Stabiliser, emulsifier and thickener
- Creates a glaze or glossy finish
- Cold dissolution in water
- Recommended dose is 10 - 300g per litre
