SOC Chef's Iota gum is a vegetable gelling agent that creates a smooth and elastic consistency. Available in a 170g tub, this Iota gum is suitable for cold dissolution, then bring to the boil to activate gelification. Ideal for use in vegan flans and vegan panna cotta.

  • Derived from red algae
  • Vegetable and vegan-friendly gelling agent
  • Gelification starts at 36°C/38°C and remains stable up to 65°C once gelified
  • Best for chilled temperatures, does not tolerate freezing
  • Recommended dose is 2g - 7g per litre
