SOC Chef's Soy Lecithin Emul is a natural emulsifier, ideal for making flavoured airs and foams. Suitable for both hot fat-based applications and not-fatty cold applications, this lecithin can contribute to fat and fruit-based foams, ganaches and oils. It does not change the texture but does have a subtle soy taste. Available in a 120g tub.

- Recommended dose is 3 - 10g for litre
