Milk chocolate base
Ingredients650g whole milk15g Arla skimmed milk powder 40g Sucranna granulated sugar 20g dextrose 250g Belcolade Cacao Trace Vietnamese milk chocolate 5g Rubicone Neutro 5 AU stabiliser Makes a total 1000g. Multiply all ingredients by 6 for a 6kg batch. | MethodHeat all the ingredients to 65°C, do not go above 65°C, then cool immediately. Once cooled, it's ready to use. |
