Shortbread is another recipe that is suitable for everyone from beginners to experienced bakers. The buttery sweet biscuits are perfect as they are but you can add your own personal touch with flavouring, colouring or icing the top of your biscuit. You could even add a layer of caramel and chocolate to create millionaires shortbread.

MethodAdd all the ingredients to a stand mixer and using the paddle attachment on a slow speed bring the dough together (takes about 5 minutes), if you don't have a stand mixer you can mix by hand. Once the dough is mostly together take off of the machine and do the last bit by hand. Roll out the dough to a sausage and wrap tightly in cling film, leave to rest in the fridge. Once chilled, cut off slices off the sausage and place on a baking tray. Sprinkle the top of biscuit dough with sugar for a added crunchy top. Bake at 150c for 12 minutes (depending on size). |
