Mantecado

Mantecado uses a traditional vanilla cream as its base and features orange marbling and is topped with shavings of dark chocolate.

Ingredients

4 Litres of white base
120g Irca joypaste white vanilla
Irca joyfruit orange (at will)
Belcolade dark chocolate shavings (at will)

Method

Blend the joypaste white vanilla into the white base. On extraction ripple in the joyfruit orange and dark chocolate shavings.

Turron

Why not try another classic Spanish flavour Turron. Turron is a popular soft Spanish nougat made mostly from almonds which, when combined with Malaga wine (or sweet sherry), makes delicious gelato.

Ingredients

4 Litres of white base
280g joyPaste torroncino (nougat)
200ml Marsala wine

Method


Blend the torroncino paste and Marsala wine into the white base.
