Honeycomb bites

These honeycomb bites are a real treat, not only do they taste delicious but they are fun to make with the kids, as it's almost like watching a science experiment, seeing how the honeycomb reacts. (Please be aware the mixture is extremely HOT so adults must make this recipe whilst children watch).

ingredients

  • caster sugar : 325g
  • honey : 50g
  • water : 60g
  • Sosa Liquid Glucose : 125g
  • bicarbonate of soda : 15g
  • Tempered chocolate of your choice. We've used Belcolade milk chocolate :

method

  • In a saucepan bring to the boil the sugar, honey, water and glucose and bring up to 155c.
  • Once mixture has reached 155c add in bicarbonate of soda and give it a quick whisk to ensure it is all incorporated.
  • Pour the mixture into a lined deep dish and leave to cool for one hour.
  • Once the mixture is completely cool smash up the honeycomb into chunky pieces.
  • Dip your honeycomb chunks into your tempered chocolate with a fork ensuring that the whole surface area is covered with chocolate, tap off any excess chocolate on the side of the bowl and place on a piece of greaseproof paper or acetate to set.
  • Leave the chocolate covered bites to one side in a cool place to let them set.
