Spiced chicken
Ingredients16 boneless, skinless chicken thighs 75g Essential Cuisine zesty Chermoula style seasoning 500g full fat Greek yoghurt 125ml pale ale 2tbsp honey Salt and pepper |
Wraps
Ingredients10 burrito size flour tortillas 1 shredded romaine lettuce 1 large red onion, finely sliced 2 red peppers, thinly sliced |
Dressing
Ingredients250g full fat Greek yoghurt 1 large bunch of coriander Lemon juice Salt and pepper |
Method
In a large bowl, mix the seasoning well into the chicken meat until fully coated. Stir in the yoghurt, ale and honey, season to your taste, cover and marinade overnight in the fridge. Meanwhile, for the dressing, blend the yoghurt, coriander and lemon juice until bright green, season to taste. Place the chicken in a roasting tray and cook in a hot oven till piping hot in the centre, leave to rest. To make the wraps, slice the chicken into strips, divide the lettuce, onion and peppers equally over the tortillas. Top with the sliced chicken, drizzle with the dressing and wrap. |
