With BBQ season nearly upon us, now is the time to get your spice rubs in to make your meals extra delicious. This recipe is not only quick and delicious but it's also a nut free satay mix without compromising on flavour.

Ingredients50g Essential Cuisine peanut Free satay style seasoning 300ml coconut milk 10ml gluten free light soy sauce 10g brown sugar 100g banana shallot, peeled and finely chopped 15g fresh ginger, peeled and finely grated 15g garlic cloves, peeled and crushed 15 - 20g cornflour, mixed into a paste with a little cold water |
MethodPlace all the ingredients, except the cornflour mix, into a suitable, thick bottomed saucepan. Bring to the boil and simmer gently, stirring occasionally, for 5 minutes. Whisk in the cornflour mix until the correct consistency is achieved, simmer gently for a further 5 minutes. Allow to cool and marinade your chosen protein/plant based ingredient for a minimum of 3 hours, before placing onto skewers and grilling. |
