Spice up your cupcakes with a zesty zing and a splash of metallic magic. Sicilian lemon icing provides a vibrant, citrusy flavour and creates the ideal base for your finishing touches. Use Rainbow Dust's edible metallic paint to get creative and add a colourful shimmer to your liking.
Ingredients400g Sicilian lemon icing Rainbow Dust metallic paint, metallic holly green Rainbow Dust metallic paint, metallic light gold Rainbow Dust metallic paint, metallic peacock green Rainbow Dust metallic paint, pearlescent white |
MethodStir the Sicilian lemon icing and place into a microwavable bowl. Warm in the microwave for 15 seconds, then stir. Repeat this process in 15 second intervals until the icing has a runny consistency (55°C, equal to around 45 seconds). Spoon the icing into a piping bag, snip off the end and gently pipe onto the top of each cupcake. Lay some greaseproof paper on your work surface and place the cupcakes on top. Take the Rainbow Dust metallic paints and tip a small amount of each into a well on a paint palette. If you don’t have a paint palette you can always use three small bowls or a large plate. Using your paintbrush, dip into the paint and then flick the paint onto the cupcakes using your finger. If you shake or whip the brush over the cupcake it will create larger drops of paint and runs, which makes the effect even more striking. Dip your brush into water after each colour to avoid blending them. |
