Double chocolate and oat cookies

The cookies are truly scrumptious, loaded with oats and chocolate. They're a really fun bake that you can do with the kids and are easily adaptable; make them even more indulgent or add fruit for a healthier option.


115g Salted butter
115g Billington's Muscovado Sugar
1 whole egg
1 tsp Little Pod Vanilla Paste
150g Nelstops Self Raising Flour
75g Oats
115g milk chocolate
115g white chocolate


Beat together the butter and sugar until light and fluffy (this can be done on a machine or by hand).

Add in your vanilla paste and the whole egg and mix thoroughly.

Add in the self-raising flour and mix until it is all incorporated.

Finally fold through your oats and chocolate.

Shape the mixture into 20 even balls, press down slightly on the top to flatten and bake at 190c for 12-15 minutes


For extra indulgence add a third chocolate and have triple chocolate or go for the slightly healthier option and add some nuts or orange zest to give a little extra flavour!
