Spiced dulce de leche cheesecake gelato
A rich cheesecake gelato with dulce de leche, cinnamon and nutmeg, finished with biscuit pieces for a creamy scoop with plenty of texture.
White base ingredients
- Milk (3.5% fat): 1030g
- Double cream (48% fat): 160g
- Tate & Lyle granulated sugar: 210g
- Sosa dextrose: 22g
- Brenntag spray dried glucose: 50g
- Skimmed milk powder: 50g
- Rubicone 5AU stabiliser: 5g
White base method
- Mix all the dry ingredients together, as this prevents the skimmed milk powder from forming lumps as you add it to the milk.
- Pour the milk into the pasteuriser and select the desired setting. We used the low pasteurisation setting at 65˚C.
- When the milk reaches 40˚C, gradually add in all the dry ingredients.
- Once the mixture reaches 50˚C, add the cream.
- Let the pasteuriser run its programme, heating the mixture to 65°C, holding it at 65°C for 30 minutes, then rapidly cooling it to 4°C.
- Once the mixture has reached 4°C, allow it to age for 4 to 12 hours, with 12 hours preferred for best results.

- White base: 5000g
- Irca joypaste dulce de leche flavour paste: 200g
- Irca joygelato cheesecake flavouring powder: 250g
- ofi professional ground nutmeg: 20g
- SOC Chef ground cinnamon: 20g
- Harvest moon shea butter coated shortcake pieces: Use as desired
Spiced dulce de leche cheesecake gelato method
- Gently warm the dulce de leche, add the cinnamon and nutmeg, and mix until fully combined to create the variegato sauce.
- Blend the dulce de leche paste, cheesecake powder, cinnamon and nutmeg into the white base until fully incorporated.
- Batch freeze the mixture according to the manufacturer's instructions.
- On extraction, fold through the shortcake biscuit pieces and the spiced dulce de leche sauce.
- Blast freeze for 5 minutes before serving or storing.
Serve and finish
- Scoop the gelato into a waffle bowl or cone.
- Drizzle generously with the warm spiced dulce de leche sauce and serve immediately.
