A fruity celebration of bold flavour - this silky smooth vanilla bean gelato is swirled with sweet-tart Amarena cherries and finished with an irresistible crunch of pistachios. A combination that's as indulgent as it is refreshing.
White base ingredients
- whole milk (3.5% fat) : 671g
- double cream (48% fat) : 104g
- Sucranna caster sugar : 137g
- Sosa dextrose : 14g
- Glucodry 385 spray dried glucose : 33g
- Arla skimmed milk powder : 36g
- Rubicone Neutro 5 AU base, stabiliser : 5g
- Makes a total of 1000g white base :
White base method
- Blend all ingredients and pasteurise in the usual way, using the low pasteurising programme.
Assembly ingredients
- Prova Gourmet Madagascan Bourbon vanilla paste : 100g
- Irca Amarena cherry variegato with whole cherries, as desired :
- Shelled pistachio nuts, as desired :
Assembly method
- Blend the vanilla paste into the white base.
- On extraction, ripple in the Amarena cherry and chopped pistachio nuts.
- Complete with a sprinkle of nuts over the top.
