Inspired by the strawberry tart that was served on Queen Elizabeth's original coronation menu, this recipe uses the new red cocoa butter from Chocolatree and the delicious ever so fruity strawberry puree from Leonce Blanc, which pairs beautifully with the white chocolate from Republica del Cacao.
Tart shell

MethodTemper the cocoa butter and spray directly on the tart case. |
Strawberry jelly
Ingredients150g Leonce Blanc strawberry fruit puree 100g stock syrup 12g Sosa vegetable setting powder Fresh diced strawberries |
MethodPlace a layer of strawberries in the base of your tart case. Then bring the puree, stock syrup and vegetable setting powder to the boil. Allow the mixture to cool slightly. Pour mixture on top of the strawberries until just covering. Leave to set. |
Strawberry tart mix
Ingredients140g milk 325g cream 2 eggs |
MethodBoil milk and cream, pour onto eggs then back into pan to cook out to 85°C. Pour onto chocolate and strawberry powder and blend to emulsify and pour into tart case. |
Strawberry mousse
Ingredients500g Leonce Blanc strawberry fruit puree 25g caster sugar 200g semi whipped cream |
MethodBlend together the strawberry fruit puree, albumina and instangel. Whisk on kitchen aid. Half way start slowly adding caster sugar and whisk until meringue texture. Take mixture off the machine and fold through the semi whipped cream. Place mixture into a piping bag with desired nozzle and pipe on top of tart mix. |
Strawberry gel
Ingredients250g Leonce Blanc strawberry fruit puree 100g stock syrup |
MethodBlend all ingredients together. Leave to hydrate for a minimum of 30 minutes. Blend again to achieve final glossy consistency. Place in a piping bag until ready to plate. |

Assembly
MethodStart by spraying the tart case. Set the strawberry jelly in the bottom and leave to set for 10 minutes. Make the strawberry gel and allow to hydrate while you make the tart mix. Next pour the tart mix into the tart case all the way to the top and leave to set for 30 minutes. Blend back the strawberry gel. Once set make the mousse and pipe on top of the tart mix and allow to set for 30 minutes. Once set, pipe your strawberry gel and garnish with fresh strawberries and some freeze-dried strawberry powder. |
