Dark chocolate flowerpot ingredients
- white base : 3 litres
- Republica del Cacao Ecuador Amazonia dark chocolate (75%) buttons : 1200g
- Sosa dextrose : 120g
Dark chocolate flowerpot method
- Warm the white base up to around 70˚C.
- Blend in the dark chocolate and dextrose.
- Place into the batch freezer.
- On extraction, fill a piping bag and then pipe the gelato into your chocolate flower pot.
- Decoration;Dobla dark chocolate flowerpot;Barbara Decor white chocolate lime coloured & flavoured blossom curls;Dark chocolate bunny made by filling a half sphere mould with tempered chocolate.
- For the eyes, pipe white chocolate circles onto baking parchment and allow to dry, then add dark chocolate eyeballs.
- The ears can be made using silicon moulds.
