Dark chocolate flowerpot ingredients

  • white base : 3 litres
  • Republica del Cacao Ecuador Amazonia dark chocolate (75%) buttons : 1200g
  • Sosa dextrose : 120g

Dark chocolate flowerpot method

  • Warm the white base up to around 70˚C.
  • Blend in the dark chocolate and dextrose.
  • Place into the batch freezer.
  • On extraction, fill a piping bag and then pipe the gelato into your chocolate flower pot.
  • Decoration;Dobla dark chocolate flowerpot;Barbara Decor white chocolate lime coloured & flavoured blossom curls;Dark chocolate bunny made by filling a half sphere mould with tempered chocolate.
  • For the eyes, pipe white chocolate circles onto baking parchment and allow to dry, then add dark chocolate eyeballs.
  • The ears can be made using silicon moulds.
