Single origin Cameroon milk chocolate drink
A refreshing jasmine-infused milk chocolate drink crafted with single origin Cameroonian chocolate.
Jasmine-infused ganache ingredients
- Belcolade Origins Cameroon cacao-trace milk chocolate buttons (45%) : 200g
- Cream (35%) : 100g
- Whole milk : 100g
- Jasmine tea : 9g
- Cesarin lemon peel : 5g
Jasmine-infused ganache method
- Heat the cream and whole milk until they reach 80°C, then add the jasmine tea and lemon peel.
- Cover with plastic wrap and leave to infuse for 30 minutes.
- Remove the jasmine tea and add an additional 20g of milk.
- Reheat the mixture, then add the milk chocolate buttons.
- Mix until smooth and homogeneous.
- Divide the mixture into a silicone mould to create smaller portions.
- Place in the freezer until set.
Assemble and serve
- Mix the frozen jasmine-infused ganache with 500g of cold milk until smooth and fully combined.
- Pour the chocolate milk into a suitable glass and serve immediately.
- For a premium finish, serve over plenty of ice and pair with an almond biscotti.
