Sticky maple & balsamic lamb chops
Juicy lamb chops coated in a sticky maple glaze, paired with caramelised carrots and smooth mashed potato for a comforting meal.
Sticky maple & balsamic lamb chops ingredients
- St Lawrence Gold dark maple syrup: 3tbsp
- Balsamic vinegar: 2tbsp
- Minced garlic cloves: 2
- Olive oil: 1 tbsp
- Zest of lemon: As desired
- Fresh rosemary: Optional
Sticky maple & balsamic lamb chops method
- Combine the maple syrup, balsamic vinegar, garlic, mint sauce, olive oil, lemon zest and rosemary, if using, to create the marinade.
- Coat the lamb chops in the marinade and leave to marinate for at least 30 minutes.
- Roast the maple carrots at 180°C for 30 minutes, or until tender and caramelised.
- Sear the lamb chops in a hot pan until golden on both sides.
- Pour the remaining marinade into a saucepan and simmer until reduced to a sticky glaze.
- Finish cooking the lamb chops, then spoon over the glaze.
Plate and finish
- Spoon a generous portion of mashed potato onto the plate.
- Arrange the roasted maple carrots alongside the mash.
- Place the glazed lamb chops on top.
- Drizzle over any remaining maple glaze and serve immediately.
