Chocolate spoons
A dipping spoon crafted with single origin Vietnam chocolate for a rich, indulgent hot drink.
Chocolate spoon ingredients
- Belcolade Origins Vietnam cacao-trace dark chocolate buttons (73%) : 300g
- Belcolade Origins Vietnam cacao-trace milk chocolate buttons (45%) : 100g
- Earl Grey tea powder : 4g
- Belcolade Selection cacao-trace milk chocolate buttons (34%) : 60g
Chocolate spoon method
- Melt and temper the Vietnam dark and milk chocolate together.
- Add the Earl Grey tea powder and mix with a spatula.
- Fill each of the polycarbonate moulds with 30g of chocolate mix. Leave to set a little.
- In the centre of each mould, place a wooden spoon. Leave to crystallise for one hour in a fridge at 16°C, with a relative humidity level below 60%.
- Demould the chocolate spoons and dip them into tempered Selection milk chocolate (5g each). The total weight of each spoon is 35g.
Assemble and serve
- Heat 250ml milk and serve in a heated cup with one chocolate spoon.
- Mix the chocolate spoon in the warm milk until fully melted and blended.
