Ingredients3 litres white base 1200g Republica del Cacao Ecuador Amazonia dark chocolate (75%) buttons 120g Sosa dextrose |
MethodWarm the white base up to around 70˚C. Blend in the dark chocolate and dextrose. Place into the batch freezer. On extraction, fill a piping bag and then pipe the gelato into your chocolate flower pot. |
